小笠原の塩
大木洋さんの父、真さんが事故で亡くなって１年と数カ月が立つ（取材当時）。真さんは６年前から手探りで製塩を始め、「小笠原の塩」を作り出した。自作の工房の２台の平窯で20時間かけて炊き上げる、甘みがあって、舌触りの良い「料理人のための塩」。試行錯誤を重ねて完成させた味だ。亡父の跡を継いで、洋さんは１年前からこの工房に入り、塩作りに取り組むようになった。
